Top 5 Easy and Healthy Salads to Help You Kick Those January Blues

January can make even the most energetic of us feel down in the dumps. After an overindulgent Christmas season filled with a feast of food and alcohol, for many of us January has become the month for health and fitness with campaigns such as Dry January and Veganuary becoming ever so popular.

That’s why we’ve come up with five delicious, healthy and easy to make salad recipes which are bound to keep you motivated during the January health phase and beyond. Perfect for lunch on the go, or even at your next dinner party, these salads are sure to go down a treat.

1. Superfood Salad with feta cheese, roasted sweet potato, pomegranate, quinoa, pumpkin seeds and avocado.

So, what constitutes a superfood? Superfoods contain high levels of vitamins and minerals; and there’s plenty in this salad. Our superfood salad ticks off all the major health food groups and is incredibly simple to make. Full of intense flavour, it packs a punch and will certainly keep you energised until dinner time.

 

Ingredients:

100g feta cheese

200g roasted sweet potato

85g pomegranate

2 handfuls crisp salad leaves

85g pumpkin seeds

½ avocado

100g quinoa

 

2. Watermelon & feta salad.

As unlikely as it might sound, this combination is utterly fantastic. Both savoury and refreshing, these contrasting flavours make for a perfect mid-day snack, or a regular party dish feature.

 

Ingredients:

700 g watermelon

1 small red onion

180 g feta cheese

1 bunch of fresh mint

extra virgin olive oil

 

3. Prawn, Mango, & Avocado Rocket Salad.

Sweet juicy mango, peppery rocket, creamy avocado and tender prawns tossed with a sweet and citrusy dressing make this a light and delicious salad.

 

Ingredients:

400 grams medium shrimp, peeled

1 tbsp. vegetable oil

100g rocket leaves

1 avocado, sliced

1 mango, diced

½ red onion, sliced

 

Dressing:

¼ cup olive oil

juice of 2 limes

pinch of sugar

pinch of cumin

 

4. Asian chicken spiralizer salad

If like us, you received the vegetable spiralizer for Christmas, then this salad is for you. We combined spiralized cucumber and carrots topped with an Asian style soy and ginger dressing for a tasty low-calorie lunch time meal.

 

Ingredients:

½ cucumber, spiralized

2 carrots, spiralized

100g of crisp salad leaves

4 spring onions, finely sliced

200g pack of roast chicken pieces

2 tsp sesame seeds

 

Dressing:

2 tbsp. sesame oil

1 ½ tbsp. wine vinegar

1 ½ tbsp. soy sauce

½ tbsp. freshly grated ginger

1 tsp golden caster sugar

 

5. Asparagus salad with poached egg.

This asparagus salad topped with poached egg is light yet flavoursome – a perfect winter warmer lunchtime meal. We recommend roasting the asparagus which brings out an intense roasted flavour and works well with the sweet and crunchy beetroot.

 

Ingredients:

200g beetroot

2 handfuls mixed leaves

¼ cucumber

8 asparagus spears, trimmed

2 large eggs, poached

1 tbsp. olive oil

1 tbsp. balsamic vinegar
